Yay !!!
After a month soaked in rock salt, our organic leg of pig has been drying for a week.
I then watered it slightly with brandy, in order for pepper and herbs to stick to it easily (and gives it a good test).
Then leg had been covered with pepper and herbs.And wrapped in a cotton cloth.
Now patience, patience, and more patience,… 6 months to go…
